Research Summary
Carbohydrates are a central feature of modern human diets. My research explores how the human taste system detects carbohydrates at the sensory, metabolic, and cellular levels. A key aim of my work is to understand the dynamic relationship between taste and metabolism: how metabolic state and salivary composition shape the perception of carbohydrates and related compounds (e.g., non-nutritive sweeteners), and how their oral detection triggers rapid metabolic responses, such as cephalic phase insulin release. In parallel, I am investigating the cellular mechanisms that support the detection of carbohydrates within the taste system.
